For the Mocha Cream Frosting:
- 1 and 1/2 cups heavy cream
- 1/2 cup powdered sugar
- 2 tablespoons cocoa powder
- 1 tablespoon instant coffee granules
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla to the dry ingredients, and beat until well combined.
- Slowly add the hot brewed coffee to the batter and mix on low speed until smooth. The batter will be thin, but that’s okay!
2. Bake the Cakes:
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
3. Make the Mocha Cream Frosting:
- In a mixing bowl, add the heavy cream, powdered sugar, cocoa powder, instant coffee, and vanilla.
- Whip the mixture on high speed until stiff peaks form, creating a fluffy mocha cream.
4. Assemble the Cake:
- Place one cake layer on a serving plate and spread a layer of mocha cream on top.
- Add the second layer of cake and cover the top and sides with the remaining mocha cream frosting.
- For extra flair, sprinkle some cocoa powder or chocolate shavings on top!
Enjoy your rich, chocolatey mocha cake with creamy frosting! Perfect with a hot cup of coffee or tea. 😊
