Ingredients:
- 1 lb (about 450g) boneless, skinless chicken breasts, cut into chunks
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- Oil for frying
Instructions:
- In a food processor, combine the chicken chunks, shredded cheddar cheese, breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Pulse until well combined and the mixture forms a dough-like consistency.
- Take small portions of the mixture and shape them into nuggets or any desired shape.
- Heat oil in a deep skillet or frying pan over medium-high heat.
- Dip each nugget into the beaten eggs, then coat them in breadcrumbs.
- Once the oil is hot, carefully place the nuggets into the skillet, making sure not to overcrowd them. Fry in batches if necessary.
- Cook the nuggets for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- Remove the nuggets from the oil and place them on a plate lined with paper towels to drain any excess oil.
